Easy Menu Monday

I don't know what it is like at your house on a Monday but around mine it gets nuts!  Getting homework done, karate, and trying to recuperate from a busy weekend the last thing I want to do is cook a big meal.  So I always try and make something easy.  That also means an easy cleanup after dinner!


I have decided from all this to have a weekly series called Easy Menu Monday.  Every Monday I will post an easy recipe or easy menu.  When I get more skilled at blogging I hope to host a link up party for Easy Menu Monday, but that is a little ways into the future.  Please feel free to share with me any easy meals that you like to make and I will share them on the weekly series.  Here is the first Easy Menu Monday Recipe.  Enjoy!


Chicken Quesadillas


This recipe is a throw together!  I don't measure anything.  I just use as much as I think I will need for the number of people I am going to feed.  Crazy right?  No!  Here are the ingredients I use but you can take away or add anything you want!

I saute yellow onion and bell pepper in a little olive oil.  Usually 5 minutes is all it takes.  I only used half an onion and half a bell pepper because my husband and I were the only ones getting veggies.  Set this aside when done.


Here is Kraft Mexican cheese, tortillas, and shredded white meat rotisserie chicken.  The tortillas are HEB brand and that I find in the refrigerator section at my store.  If you don't have an HEB, just look for these type or get fresh.  I like these kind because they keep longer in the fridge.  I got the chicken from the deli section. They are really good and the chicken is a whole one so you could use it for more than one meal.


Now depending on how easy you want this to be you could heat the tortillas up on the stove and then place your ingredients on or just add your ingredients and then put into the oven.  Even if I heat mine up on the stove(the tortillas that is)  I still put them in the oven to bake.  If you don't heat up on the stove, just bake a few minutes longer.  I used eight tortillas for four people.


So here is a list of ingredients:


Onion
Bell pepper
Cheese of your liking
White Meat Chicken
Tortillas
Olive Oil


Remember, depending on how many people you are feeding, the amounts of ingredients will change.  What you see above was feeding four people.


Instructions:


Saute your onion and bell pepper in olive oil for 5 minutes or until veggies are tender.  Set aside.

Shred your chicken into bite size pieces and set aside.


Heat up tortillas on stove until they bubble up if you are using refrigerated tortillas.  But for fresh tortillas or if you want to skip the heat up, just place tortillas on a baking sheet.  I place foil on my baking sheet and spray with a little Pam before I bake.  This makes for an easy clean up.


Now put chicken, veggies and cheese on your tortilla.  Place another tortilla on top and they are ready to bake.


I bake mine at 350 degrees for 5 - 8 minutes or until a little brown on top.  Now, if you didn't heat up the tortillas on the stove, you may want to bake for 7- 10 minutes.

Creative Minds


Since I have been blogging and pinning away on Pinterest, I have come across so many amazing ideas to do with kids.  My daughter and I have had fun putting things together and being creative.  Here are a few of the fun things we have made.  I am going to try and reference what I can find or remember.  These ideas were not mine.  They came from some pretty cool creative minds other than mine own!


These two snowpeople were actually my daughter's idea!  She was very proud of them!

Finger paint caterpillar.  This one came from Pinterest but I can't find it anymore!

This one is from Pinterest too.  We did put our own spin on it though with my daughter drawing a face for each family member.

This is finger paint crazy time!  This was our idea and I just let her go on some brown paper.


These faces I found on Pinterest.  The idea is from www.tipjunkie.com is where it goes to and is on my Pinterest page under Kids Activities.  Zoey loved doing this one!


Here is another craft we had fun doing.  This came from Pinterest as well.  www.notimeforflashcards.com.  This one is under Kids Activities too on my page.   Zoey did the colors in the order she wanted.  We used scrapbook paper and glue.  I cut out the rainbow and hung it in her room.  She was so proud and showed both her daddy and brother!

Funny how I forgot that a couple of these were from our own creative minds!  There is so much inspiration out there it is not hard to get those creative juices flowing!  We love it!

A couple things done!

Hey there everyone!  Hope you are having a great week.  I started a new job on Monday and it has been busy around here.  It is only a temporary job position but I have enjoyed being back to work after four years at home.  Best of all my daughter gets to come with me.  Pretty nice.  


There have been a couple of things I have been meaning to finish and I finally did tonight with the help of my husband!  Love that guy!  The first are some frames that I wanted to put on the wall in my kids bathroom above their towel hooks.  I took two IKEA frames that I already had, scrapbook paper and stickers that I had, ribbon that I had and picture hooks that we had too.  





I bought two 8 x 10 pictures from Shutterfly and that cost $8.00.  I chose two pictures of my kids of them in the bathtub.  I had to put some color paper behind the pictures because they were not quite 8x10.  I used the stickers to place their names and a fun water related word in the upper corners.  The ribbon I used to hang from the picture frame hooks.  Here is the finished look:

My nine year old son was not thrilled with this and told me I have to take it down when his friends come over!  I cannot help it that picture is so fun and silly that I could not resist framing it!  I will try my hardest to remember to take it down.  It does accomplish my goal of not getting the towels mixed up!


The other project I wanted to work on was painting the shelf in my bathroom again.  I posted about this weeks ago but I just didn't like the way the paint looked.  I used some weird primer and spray paint.  Anyway, I wanted to use the paint I had left over from my pantry(which has really come in handy around my house) to re-paint the shelf.  Here is the shelf before the second repaint:

Now here is the shelf after I finished painting it tonight:
It has a more even look.  Very happy!

I did a little rearranging but not to much.

I added the big basket at the bottom to hold toilet paper.

I bought this container from The Container Store for cotton balls.  A whole bag will fit into this thing!  Woo-hoo!  I am hopping by putting it on the top shelf with my toner it will remind me to Use My Toner!!

I cannot wait to work on the walls in my bathroom.  I am thinking beadboard.
